Shredded Beef Tacos

I’ve been slacking lately at keeping up with this blog, and if I’m honest with myself, most other things in my life.  I haven’t spent much time baking or trying new recipes for the past few months since I believe it’s never in your best interest to try a new recipe in your first trimester of pregnancy. =) Now I’m feeling much better and I have a few good ones I hope to have posted soon. This taco recipe is one I originally found on Crockpot365. I really love her blog. I only made a few preferential changes to it and we really loved it. I hope you like them!

 

Shredded Beef Tacos

3-4 pound beef roast

1/2 cup brown sugar

1/3 cup soy sauce

6 cloves of garlic

1/2 onion, diced

1 Tbsp ginger

2 Tbsp rice wine vinegar

1 Tbsp sesame oil

1 half jalapeno, diced with seeds removed

 

Trim the fat off the roast and plop it in your crockpot. Then just dump the rest of the ingredients in however you want.  Cover and cook on low for 8-10 hours. Shred the meat and stir to mix everything in well. It really is super easy. Serve in corn tortillas with lettuce, tomato, cheddar cheese and sour cream on top. Delicious.

Easy, Easy, Easy.

My husband had his tonsils taken out this week. It’s not been fun. I’ve been trying to find things to make that he can eat (you know…soft, squishy stuff), but it hasn’t been pleasant. I tried a new-ish thing that was so easy. I thought since it involved mashed potatoes we’d have a winner. He couldn’t eat it, but my daughter and I really liked it so I thought I’d share it with you. It’s just a different kind of Shepherd’s Pie than I had ever had before and it was dang good. Here’s the recipe (renamed by myself):
NEW-ISH SHEPHERD’S PIE
Ingredients:
1lb ground beef
1 can green beans
1 can cream of mushroom soup (I used the Health Valley GF stuff)
1 cup shredded cheddar cheese
2 cups mashed potatoes
Directions:
Brown the ground beef on the stove-top and drain grease. Add soup and green beans and heat through. Pour meat mixture into casserole dish and cover with cheese. Top with mashed potatoes. Bake at 350 degrees for about 30 min or until spuds are lightly browned.

Not Yo Mama's Meatloaf

I was never a big fan of meat loaf, until one fine day when my mom made this little number. My mind was forever changed. This is what we had for dinner tonight and Phil is anxiously awaiting eating the leftovers for lunch tomorrow. =) Here’s the recipe:

Cheeseburger Meatloaf

Combine:
1 lb. ground beef
½ c. gf oats
1 tsp salt
1 egg
1 c. grated cheese

Shape into a loaf and put in loaf pan.

Combine sauce ingredients:
1 ½ Tbsp prepared mustard
½ c. brown sugar
2/3 c ketchup

Pour sauce over meat loaf. Bake (uncovered) for 1 hour at 350.

We eat this with baked potatoes.

Introducing: Placos

"Placos" are what we like to call our variation of Tacos. I'm not really sure why. But they're good. This isn't anything spectacular, but we like them this way so I'll pass it along.

We cook our corn tortillas on the stove in a little extra virgin olive oil. Then fill them with this delicious mix:

Cook 1 lb ground beef on stovetop
Add 1 can black beans, cook through and strain beans and meat.
Add 1 med potato, shredded and cook approx 5 min.

Top with regular taco stuff, but definitely avocado and fresh lime juice.

We eat this almost weekly. =)
